• Those deeply involved with farming are aware that most of the cultivated land on our planet has lost mineralization. During thousands of years of agriculture, farmers were careful to maintain continuous inputs of organic matter. The sad fact is that in less than a century, 60 to 90% of that humus has been lost.

• The loss of humus results in a corresponding loss of quality and food safety.

• Despite an awareness of the humus depletion, there was an increase in chemical fertilizers in an effort to maintain production quality and quantity. That this was patently an unwise path to take is now self evident.

• With the loss of humus, changed microbiological activity of the soil and a further gradual loss of the ability to transform organic matter into humus, has resulted in an adversely affected ability to form essential compounds into a substrate for neutralizing many plant diseases.

With the disappearance of each humus percentage point of cultivated land, 91,500 tons of carbon dioxide is produced. Considering only cultivated areas of Europe (a total about 400 million hectares) with an average loss of about 3%, about 110 billion tons of carbon dioxide is produced.
